So, which has been your favourite cupcake so far? and what would be your personal dream cupcake?

i realize many of you have answered this to some degree previously but humour me please, i have my reasons;)
please include desired texture, richness, type of icing (just describe it in terms of texture and flavour - no technical terms needed, ie: fudgey, old fashioned, light, creamy, etc.)

Key Lime cupcakes take 2

so a little while back i made another version of key lime cupcakes. this time i followed my own instincts and created my own recipe. they really tasted like key lime pie AS a cupcake rather than the last ones which were more like key lime pie IN a cupcake. again, not many testers got one, so if you did, consider yourself lucky.

Cupcake week on Martha Stewart

Martha is celebrating cupcakes this week and she's having a "cutest cupcake" contest. 10 winners will be handpicked by Martha herself.

i entered the Elephant, and after combing through all the entries so far, i think i might be in the running. there was one entry that was such a great idea, stunningly executed and beautifully photographed that it blew ME away, which takes some doing. (after all, i have been obsessively staring at cupcakes on the web for most of a year now) i'm not going to tell you what it was, because i'd already had the idea of doing it for someone i know, although my version will look pretty different.

really though, the contest i want to win is called "cupcake hero" - each month there is a theme and the best recipe/idea for interpreting it complete with photo wins! gotta go check out aprils theme ingredient, i didn't have time to try for march, which was marshmallow.

well, i never did take pictures of these, and most of my usual tasting crew didn't even get any, but i did make pretty awesome key lime cupcakes for easter. they weren't (perversely?) decorated at all. though they did look rather like boobies.

they were not, i'll admit, entirely my recipe. and i think i might try it a little differently next time, but they were pretty darn tasty. and we got a small pie out of it as well because of the leftover filling. the cupcakes were good, but the pie was AMAZING. i even found real key limes*

*i love key limes - they're tiny and they taste more like mexican limes. i love limes, but not as much as sparkledebacle.

Drunken St. Patrick's Day

I decided to create a recipe from scratch that would be more Irish than just pouring in some baileys (not that i have anything against baileys). i thought stout, whiskey and then treacle. even better, all together. so the cake is stout and treacle with some spice, all golden and rich. my only disappointment with the way they baked up was that they are a little too buttery, something i will easily remedy next time i bake them. I then decided the icing needed to be light and creamy with whiskey as the flavouring, so i took this opportunity to try a european style buttercream*. I am thrilled with the result. i made green fondant shamrocks for the toppers - some lucky tester will find a 4 leaf clover and that individual gets to choose the next flavour for testing - anything they can dream up!

* ON Buttercream: there are three basic types of icing, all going by the name "buttercream". they are not at all the same. 1. made with egg, a hot sugar syrup and LOTS of butter - european style - which is very light and creamy and people often say it's less sweet (i call bullshit on that) 2. made with butter, add icing sugar, milk or cream - old fashioned - what i grew up making it is heavier, easily made fudgey or lemony or whatever, and has way less butter in. 3. made with shortening, sugar, chemicals and not much else - commercial - it usually tastes like the crap it is and has put many people off "buttercream" icing for life.

Lemon devils food cake with dark semisweet chocolate mini-shards, lemon buttercream (family recipe), dipped in more dark chocolate, in certain cases rather elaborately decorated with more buttercream and fondant.

Last night I got all experimental in honour of St. patrick's day, creating treacle stout cupcakes with whiskey and treacle buttercream (european style - made with NO electric tools i might add!!). more on those and photos later...
